Burgers for the 4th!

Yes, Burgers!!  No, I'm NOT suggesting you head out to the fast food joint and pick up a lunch full or who-knows-what.  On the contrary, take the time if you have the holiday weekend free, and create your own burgers!

With a meat grinder attachment for your Kitchen Aid Mixer, making ANY type of burger is a breeze.  Add fresh herbs, spices and salt-free seasonings (perhaps Cajun, as an idea) and you've got yourself a lean, clean burger that you can throw on the grill for your 4th of July celebration.  While you can, of course, buy many kinds of meat already ground, it's nice to know exactly what's in a burger by doing it yourself.  Please remember to follow safety precautions and keep everything clean!!

Once you've ground your  bison (tenderloin or rib cuts tend to render the most juicy burgers) , mix with a bit of cold-pressed, extra virgin olive oil and a raw egg. Mix thoroughly.  Add some fresh, minced garlic, rosemary and black pepper.  Throw in some chili powder if you want a bit of heat.  Mix again (with your hands) and shape into patties.  Grill to your desired degree of doneness.  Separately, throw some squash, eggplant, peppers and sweet yellow onion, cut thickly, on the grill as well.  Serve everything together with Bibb or Butter Lettuce in lieu of a starch, lectin-filled bun.
