Get Out The Grill

Here is just one of hundreds (thousands?) of grill ideas…

 I used my meat tenderizer tool to pound out some free range chicken cutlets, then added some fresh lemon juice and some salt-free cajun spices.  The grill was ready to go (thanks to my husband; why is it that men always like to grill stuff?  Anyway….)  We threw in some mesquite wood chips after a brief soak to add a bit of flavor.  The pepper, onions and scallions are plain & simple- didn't even need any oil.  Nothing wrong with eating olve oil, of course, but we opted to douse our veg with flax AFTER cooking.   Another lovely summer meal….
