Salade du Paleo- Oeuf Poche & Lardon


So easy, fresh and light!  

-Wash and spin dry Butter or Bibb Lettuce.  Add some chopped tarragon, chervil, chives and parsley.  Toss together in large bowl.

-Poach your eggs by boiling at least 4" of water in a pot. Add a tablespoon of lemon juice and swirl the water.  Break an egg into a saucer and tip it into the boiling water.  Reduce to a simmer and cook for about 90 seconds. Remove with slotted spoon and place in ice water.

-If you can find nitrate and nitrite free, low sodium, natural bacon from a reliable source- go for it.  One piece once in a while is definitely Paleo!  Alternatively, you can easily use sliced lean turkey or another leftover protein!

– Toss the leaves with lemon juice and a dash of walnut oil, and serve with egg and bacon on top.
