Sauteed Tomato Basil Prawns

Great as a starter, or as a main if you serve larger portions!

Saute fresh garlic and basil in olive oil.  Add one large freshly chopped tomato.  Saute, then remove from heat.  Let sit for 20 or so minutes to let the flavors develop, and allow you time to make a salad or steam some veg!

Right before serving, add Jumbo Shrimp, or Prawns with the shell on (this will allow a better flavor and moist texture- similar to cooking with skin-on, bone-in chicken breasts).

Saute briefly until pink- about 3- 4 minutes, stirring.

Serve on a bed of veg with a fresh basil leaf for garnish.
