Technique: Cooking Jumbo Shrimp

Buying your prawns or shrimp intact (shell on!) is not  only more cost effective, it renders a more tender and moister shrimp when cooking. However, if you've got a picky eater in the house, they might be put off by the messiness of having to peel their shrimp as they eat.  

Technique tip to the rescue!

Using kitchen shears, cut a slit 2/3 of the way down the back of the shrimp and cut the legs off in the front, but leave the shell on.  Devein the shrimp.  Give a quick toss with lime, then rinse well before you throw it in the stir fry, onto the skewers for the grill, or into your Paleo Fish Stew!

Delicious dinner, great source of protein, and NO mess!
