What About the Rest of My Leftovers?

We’ve covered what to do with that turkey carcass, but what to do with the remaining roasted sprouts, Paleo cranberry sauce and steamed broccoli, or whatever else your Paleo feast may have included?

Soups, marinades and salads are but three options you have to choose from in order to re-create your holiday meal into something brand new.

  • Steamed broccoli can easily be whizzed into a lovely pureed soup.   Pour some homemade stock in the blender, add the broccoli, some fresh garlic and a ripe avocado and puree until smooth.  Heat over medium, garnish with diced red onion and serve with some baked salmon.
  • Pour some red wine into the leftover cranberry sauce, add some fresh orange slices and pour into a large ziploc bag.   Add a nice hunk of grass fed flank steak, press out the air and seal tightly.  Leave it in the fridge to marinate over night, then drain, place on a wire rack and broil until cooked to your level of preferred cooking.   Serve with some spicy sauteed rapini.
  • Dice remaining roasted sprouts, or whatever veg you fancy with some fresh garlic and your choice of protein (and you may prefer not to use turkey if you’re ‘turkey-ed’ out!), such as some leftover pastured pork or seared tuna.  Add some olive oil and mash into a thick consistency, a la traditional ‘chicken salad’.  Serve atop wild greens with some seasonal, sliced pear and toasted pecans.

Of course, you can always opt to freeze things, but don’t be timid about getting creative with your Holiday leftovers!
