Chimichurri Steak (or Chicken, or Fish!)

For a fantastic Argentinean (and naturally Paleo) marinade/sauce- try the following combination:


Olive oil, fresh lemon juice, garlic, shallots,parsley, basil & garlic.   

Whiz in your food processor til smooth and add more of any of the above ingredients specific to your own favorite flavors.

Use as a marinade on chicken or lean steak the day before cooking, or on fish the day of and reserve some to the side. 

Grill or broil til done and serve with your favorite steamed veg.  (For this meal, you may want to stick with steamed veg, rather than sauteed or roasted; keeping them plain so you can drizzle some of the reserved, warmed Chimichurri sauce on top.)

Enjoy with a fresh green salad and a glass of chilled Yerba Mate- perfect pairing!
